Better-not-bitter kale brownies

You’ve seen kale fried, juiced and shaked. But have you seen it baked into a brownie? The idea baffled us at first, but when we knew it could be done, we decided to jump in on it. Who wouldn’t want to sneak in a little healthy in their favourite indulgence?

We wanted to make sure the recipe was great, so we tested it on kids. The verdict: yummy. They ate their daily dose of veggies without even knowing it. You’re welcome, moms!

 

*Recipe makes 12-16 portions

Ingredients 

  • 3/4 cup gluten-free flour (try 1/2 cup Brown Rice flour, 1/4 cup Arrowroot flour)
  • 1/2 cup Cocoa powder
  • 3/4 cup Coconut sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup Coconut milk (full fat)
  • 1/4 cup melted Coconut oil
  • 1 cup finely shredded Kinky Kale, lightly packed
  • 1 teaspoon Vanilla extract, or 1/2 teaspoon Vanilla powder

Steps

  • Preheat the oven to 350 degrees F. 
  • In a medium-sized bowl, mix the flour, Cocoa powder, Coconut sugar, Baking powder and salt.
  • Add in the Coconut milk, Coconut oil and Vanilla, and stir until everything is well mixed.
  • Fold in the Kinky Kale. 
  • Lightly grease an 8×8-inch baking pan with coconut oil, then pour in the batter and smooth it out evenly.
  • Bake for 22-25 mins, depending on how fudgy you like your Kale Brownies.
