Easy Microwaved Popcorn Kale: Your Excuse to not Really “Cheat” on Cheat Day

In many ways, one can say I am a creature of habit. I thrive on routine and get excited over organization tools; however, I do enjoy the occasional “cheat day” where I let loose—and by let loose I mean throw on my most comfortable (and very holey) house t-shirt dress, unclasp my bra, and dive into my couch while clutching the remote (or in this case, my phone) as I browse Netflix or YouTube and prepare myself for a binge. 

And speaking of binges—as much as I would like to use my cheat days as an excuse to eat whatever I want, I try to keep the junk food at bay. Entering my thirties, I made a commitment to take smaller steps to better my eating habits (unless I am on holiday, of course!) and exercising more. Hence, here is a quick and easy Popcorn Kale recipe that you can simply toss into your microwave and forget about until you hear that very much-anticipated “ding!”


    • 1 bag Sustenir Kinky Kale (I personally love Sustenir because it is so clean, I can eat it straight from the bag)
    • Olive Oil
    • Salt & Pepper or your seasoning of choice

Take the leaves from your kale (save the stems for a smoothie!) and space them out on a microwavable plate. Make sure that they are not overlapping because this will affect the kale’s crunch.

Drizzle some olive oil over the kale. An olive oil spray works, too! 

Sprinkle with your seasoning of choice. Salt and pepper works, but I love Trader Joe’s Everything But the Bagel seasoning—so I’m using that today!

Pop the kale into the microwave.

Here’s a tip: don’t forget to cover it with a splatter protector. This helps crisp up the kale better. 

Set the timer to two-and-a-half minutes on medium-high heat.

Don’t be shocked to see that the kale has minimized in size—that’s normal! Allow the kale to cool before gently transferring them to a serving dish.

If you are making this in multiple batches, I recommend either allowing the microwave to rest for 10 minutes after every 2 batches or just use a regular oven.

If you are using a regular oven, pre-heat it to 275 degrees F for 20 minutes before adding the kale. Then, allow to cook for another 20 minutes. Check the kale and flip after 10 minutes to ensure it crisps up right.

Popcorn Kale is really delicate and crispy, so as a serving suggestion, you can lightly spritz some lemon juice or vinegar on them. You can also be a little extra and add some shaved Parmesan cheese and douse with truffle oil. 

Then comes the best part—diving right in. Enjoy!
